Everything got cancelled today, which was actually a good thing. We got to spend the day at home together, catching up on schoolwork & other chores, watching a few hours of the Inauguration, playing outside. Of course there was also hot chocolate to drink and this afternoon older dd baked our favorite Oatmeal Scones (recipe follows).
Some of us are taking off in the morning for a few days in SB where it's Very Cold and Much More Snowy. The rest of us will miss them of course, while we hold down the fort and enjoy a quieter house.
Here's the recipe. Sorry I don't have a picture. I enjoyed my scone this afternoon with apricot jam from TJs. Yum!
Oatmeal Scones
from the Scottish Lion Inn, North Conway, NH
2/3 c. melted butter
1/3 c. milk
1 egg
1 1/2 c. all-purpose flour
1 1/4 c. old-fashioned oats
1/4 c. sugar
1 T baking powder
1 t. cream of tartar
1/2 t. salt
Mix the dry ingredients together in a bowl. Make a well in the center and add the wet ingredients. Combine quickly & thoroughly. Spoon mixture onto a greased baking sheet (or a baking stone) and pat gently into an 8-inch circle. Cut halfway through into 8 scones. Bake at 450 degrees for 12 minutes or so. Do not overbake. Serve warm with your favorite jam or jelly.

I will have to make these! I love scones!
Hi, haven't checked in a while. these scones look great, and should work with freshly milled certified gluten free oats here.
I tried to copy and paste the recipe into word, for me to print (and make tomorrow,) and somehow copied your whole page!!! I was glad to see it was "all still there" after I shut word down...LOL!
